Rainbow Cupcakes: I can finally taste the rainbow!

I’ve always wanted to experiment with colors on cupcakes and now that I found the time to do it, I dove into the whole idea! First of all, I know I have to use a lot of bowls and spatulas for this one, I didn’t realize it really was A LOT. Nevertheless, making rainbow cupcakes was the most relax I’ve had in the midst of school work piling and piling over.

So, the first rule, prepare all the ingredients and bowls needed. In this case:

5 bowls

5 spatulas

5 spoons (to go hand-in-hand with the spatula)

small bowl for dry ingredients

small bowl for wet ingredients

Ingredients

Prepare all the ingredients according to recipe instructions, but I didn’t use a recipe anymore. I already have the recipe in my head! A must for baking/cooking! Memorize the ingredients by heart ❤

Don’t mind the messiness, it naturally comes with baking, and the fact that I used a lot of colors.

Pour each color carefully into the cupcake liners. I strategically followed ROYGBIV… but with 5 colors only.. xD and added chocolate chips in between colors!

For some gravitational reason, the batter swirled itself while I was adding them one by one.. Not complaining or anything, I like how it turned out!

After 5 hours of carefully preparing the batter, not to flatten out the air bubbles, I’ve created an army of Rainbow Cupcakes ready to spread happy rainbows all over!

I know the outer kinda turned a bit brown, it’s really like that. So when you slice the cupcake in two, SURPRISE!

Carrot Cupcakes (and a bonus mini loaf bread): Less Sweet, More To Eat!

I thought I should bake another Carrot Cupcake batch since the first time I did way back back then, it was super fail. And now, it turned out to be good and decent haha! Don’t wanna over-hype…yknow what happens xP

Whenever I go inside a baking utensils/ingredients store, I tend to buy more than I plan to. It’s just so addicting! I already have different sizes of pans, from 4” to 9” since that’s the only biggest that could fit my mini oven. What more if I have a huge oven! Haha! And now, the latest additions to my extending collection are a mini loaf pan and a heart-shaped pan. Here, I tested the mini loaf pan and it was gentle on the pastry, just like any other nonstick pans are. 

I like my cupcakes frosting-less and these little munchkins are the type that you don’t have to put mountains of frosting on just to taste good. It has this subtle sweetness to it so you can indulge in them without feeling the guilt afterwards. 

This just jumped to #1 spot of my go-to recipes for cupcakes. I like the texture, the taste, how fluffy it is with every bite.. Just go have a bite for yourself to see what I’m talking about! The official menu is now available, just leave your email to my ask box! Drool over this! xD

Green Tea Bottom Cupcakes! Did I mention it’s Sugar-free? ❤

Instead of going with the regular chocolate recipe for Black Bottom Cupcakes, I used Matcha Green Tea to give it a new variation. And also the fact that I’ve grown tired of anything chocolate… 

Now introducing Green Tea Bottom Cupcakes, Sugar-Free!!

I just like how the cheesecake curls on top of the green tea portion of the cupcake. The cheesecake was perfect! No cracks, smooth and golden.

Since it’s sugar-free, you can really taste the pureness of the green tea without any sweet ingredient hindering it. Plus, the thin layer of cheesecake on top complements the green tea on the bottom. 

I would definitely be making these puppies again soon! ;D

Just whip those cupcakes with Skippy and Nutella straight out of the jar!

And so I went shopping for baking stuff! It was like I wanted to grab everything and just go straight to the cashier without even looking at the prices since everything was way cheaper! Yeah, this was also when I bought a cookie cutter set to add to my mini collection. I got addicted to buying a lot of tools for baking (i.e., pans in different sizes, spatulas, cupcake/muffin paper liners, etc) Especially the cupcake/muffin paper liners!! This is just one of the many I bought! How oh so cute! I also got the one with the reindeer, gingerbread man, candy canes…!! A LOT, I tell you!

So I decided to bake chocolate cupcakes with it! Bad idea, I warn you! Hahaha! The graphics and color drowned from the darkness of the chocolate! xD Yeah, decorated cupcake liners are meant for light-colored cakes only…

But everything went well in terms of the taste and texture. It was a very very soft cake with rich bitterrsweet chocolate taste, so I just whipped it with Peanut Butter and Nutella straight out of the jar! Didn’t have time to mix it frosting style… Too mouth-watering!

Red Velvet + Ice + Pistacchio

Lalalalala… 

This is my second post for the Red Velvet cupcakes because my earlier post didn’t give justice to how good-looking and tasty these cupcakes are!

For those of you who don’t know what a Red Velvet is, here’s the rundown:

- chocolate

- smooth in texture compared to other cupcakes

- it’s freakin’ chocolate!!

The red coloring was just to cover up the chocolate-y-ness of the appearance because there are a lot of chocolate cakes out there.. this one cupcake just wants to be mysterious :P

I kinda forgot to bring my electric mixer so just used a spatula to mix it, but the texture didn’t quite get to where I wanted. Note to self: DON’T FORGET THE ELECTRIC MIXER!

Well, I want to upgrade to a Kitchen Aid Artisan Series (read more - scroll down)… but not now, I’ll need to save up for that first! :)

Notice the liner cups, I only filled it 2/3 full. Always like that!

I always enjoy watching the cake rise up. It’s pretty entertaining! Haha! xD

Of course, after the first batch I just had to taste it. Yummy! :)

Made 1 dozen. They look like an army of Reds! You should be scared because they’ll shove themselves down your throat haha! xD

Skewered a hole on the center of the cupcake and used a piping tool to fill them with what else?! Of course, Cream Cheese Frosting! Mmmmmm!

About that Kitchen Aid Artisan Series Stand Mixer, here’s how it looks like:

     

I like the “Ice” and “Pistacchio” colors better compared to the dozens more available. I think the red version is so over-rated and the shades of different black is just too plain. Why would I pick something common from a wide variety of, in lack of a better term, happy colors..?

It also has 3 paddle attachments: whisk, mix, knead.

Can carry up to 5 quarts and it also has a protector so that the batter won’t splat all around the kitchen. 

Did I mention this the heavy duty? It’s the top-of-the-line stand mixers out there. I think all bakers should have one in their kitchen. If you can’t afford it, save up and really try to buy one someday! It’s gonna be so worth it and it’ll help you save time in your baking because while it mixes, you just pour in the ingredients. And you don’t have to pause and scrape the sides all the time because the mixer attachment covers up the whole bowl as it goes around and around. 

These 2 are on my top list! But of course I’ll just have to choose 1 in the end right? xD

Banana Cream Cupcakes: the best cupcakes in town

I dug out some pictures from not too long ago. It was when I decided to bake something for my friends for my birthday and it was my first real baking since I did not use any instant bake boxes or anything for that matter.

I baked everything from scratch and surprisingly enough, it was really good! As in ‘Wow! There’s no fail parts and stuff!’ 

And so I realized after a while that THIS is what I want to do forever; I want to open a bakery; I want to see people’s reactions when they start to munch my creations.

The first ever batch that I baked! No instant; no artificial flavors ;)

A classic way to frost a cupcake: creamcheese frosting! 

Other bakeries might say that Red Velvet is their best-seller, but mine is my Banana Cream Cupcakes, then my Red Velvet comes in second ;)

NINJA CUPCAKES: something your taste buds will thank you for!

1st bite, you’ll think “oh its just a regular coconut cuppie”

2nd bite, “i can taste freshly chopped almonds”

3rd bite, “there’s pineapples!”

4th bite, “there’s something tickling my taste buds but i cant seem to figure out what flavor is it”

5th & last bite, “I WANT MORE!!”

This is what’s great about my Ninja Cupcake, it acts like a ninja inside your mouth! The flavors are moving so fast with every bite you make, you can’t seem to get enough of the flavors. You’ll end up wanting more! 

This is the good kind of confusion with flavors because you’ll figure it out in the end and they don’t over-power each other. They’re the perfect match!

My first sample batch was perfect! This flavor goes straight to the menu I’m fixing up.

Tried it out in my new purchase of box packaging. Looks pro! xD

And made a bunch of sealing stickers and little ninjas for box decoration. Isn’t he cute?!
