WHOLEWHEAT PASTA with Shrimp Tomato Sauce
This little pasta dish may sound like a regular tomato sauce pasta but it’s really not, and it’s not that “little” either. The tomato sauce is infused with a lot of herbs that you can totally cut down salt, and other unnecessary seasonings!
Recipe - 1 serving:
50 (raw) grams Whole Wheat Pasta
1/2 Green Bell Pepper, chopped finely
1/2 White Onion, diced
3 cloves garlic, chopped finely
A handful of Basil leaves, chopped finely
3 leaves Oregano, chopped finely
3 medium-sized tomatoes, cubed
1/4 Carrots, chopped finely
a handful of Spinach, chop roughly
3 shrimps
3 Tablespoons tomato paste (to taste)

Step-by-step:
1. Boil water in pot. Place pasta in boiling water. Boil 15-20 minutes.
2. While boiling… Chop finely Bell Pepper, Basil leaves, Oregano leaves, Garlic, Carrots - set aside, separately.
3. Cube Tomatoes, White Onion -set aside, separately.
4. Preheat medium-sized skillet with a teaspoon of Olive Oil. You’ll know if the oil is hot and ready by touching it using a moist wooden spoon. If oil sizzles, that’s the time you can add the ingredients.
5. Sauté Garlic and Onion til almost golden brown. Throw in Tomatoes & Carrots. Cover pan with lid for 1 minute or until tomatoes become watery.
6. Add in Basil, Oregano, Spinach, Bell Pepper - Mix well. This is also a good time to add the shrimps so it’ll absorb the aroma of the herbs while cooking. 
7. Add Tomato Paste and give it a good mix. 
8. Drain the Pasta from the boiling water just before serving. We don’t want sticky pasta now, don’t we? You can also mix it with a little olive oil, but that’t not necessary if you drain the pasta straight from the pot to your plate.
9. Be creative! Presentation is part of the meal if you want to enjoy your delicious creation!

Insane Insanity!

One more week to end my 2-month program of Insanity!! So glad i’ve reached this far! Keep pushing, keep your motivation, and surround your self with inspiration & positivity! Don’t forget to eat right too!


I’ve already lost 10-12 pounds by just doing Insanity, but I want to lose some more and gain more muscles. So what’s next now? P90X is already waiting for me at the end of the Insanity track! Woohoo! Keep pushing! :D

Lunch after workout: Fresh Romaine lettuce with grilled chicken breast, mangoes, &amp; toasted wheat bread. Homemade dressing: balsamic vinegar, olive oil, chopped rosemary, &amp; puréed mango! IM READY TO CHOW DOWN! 
Diet tip: Try to mix sweet fruits to your sour dressing to shake things up a bit! And also, so you won&#8217;t get tired of the same taste everyday if you&#8217;ve been eating grilled chicken for a while now ;)

I started the diet roll January 2012…

Seriously this time. Mainly, NO:

- White rice (Since this has been a daily serving since the day I was a kid, it was kind of difficult to let go at first. But I got through it with a constant reminder in my head that I have to let go, otherwise I’ll be going no where.)

Healthy option: Red/Brown rice, wheat bread

- Potato chip, fries, cookies, cakes, sweets, etc aka Junk foods! (I have no problem not eating potato chips and fries because I really don’t eat those things. But letting go of baking cookies and cakes was also difficult! In the end, I just had to because it’s for the best.)

Healthy option: Granola bars, corn flakes (without milk and/or not the frosted one), soda crackers

AVOID:

- Sugar. If you can drink your coffee without sugar, then skip the sugar. Besides, coffee tastes the best when it’s in its raw blend!

Healthy option: Honey, coconut sugar, muscovado sugar

- Fatty foods. I know most of you will hate me for this but try to avoid the bacon if you can. Does not matter if you scraped off the fatty lining, it still has oils that you don’t want your body to absorb. 

Healthy option: Chicken, salmon, turkey

AND DON’T FORGET TO EXERCISE EVERYDAY! Even at least a 20-minute jog, it won’t kill you! 

Those are the things I can think of right now, because those are the things I eat on a daily basis. So far, so good! I’ll just keep updating if something comes up! ;D

Diet tip: Instead of grabbing the bag of chips to munch on, drink water instead. It&#8217;s just your mind playing tricks on you! ;)
*Photo I took when I volunteered to help pack the goods for the calamity victims. Feels so nice to do a good deed, and it was also good exercise carrying a lot of things around! Hehe ;P Getting deployed was the fun part!

Baked Norwegian Salmon with baked toasted capers on top, fresh veggies on the side and 1/4 cup of red rice. You can skip the rice and alternate it with a slice of wheat bread instead. 
Diet tip: Portion control. Only eat what your body needs, and that&#8217;s it. Control!

ITALIAN CHICKEN SANDWICH
If you’re tired of the regular tasteless grilled chicken sandwich, here’s a substitute without added fats and other unwanted substances!
The one that brings taste to the chicken fillet is the RED PESTO which the breast fillet is marinated in. Just whip it on the chicken for about 5-10 minutes and dip it in bread crumbs. (My own version of the the homemade red pesto is super infused with basil leaves, as in I used a lot!! Blended with garlic, dried tomatoes, and olive oil)
Cooking the chicken has 2 options: fry it with shallow olive oil on a non-stick pan, or oven-bake it. Until golden brown.
Sandwich: toasted wheat bread - thinly slice mozzarella cheese - romaine lettuce - chicken - excess thinly sliced mozzarella cheese - toasted wheat bread
